That's an easy answer..... a fool and his money is easily parted.
Summit makes their money by selling bolt-on things, and certainly there are a few (many?) suckers that just need such an item.

I´ve seen that in the printed catalog already...
Sometimes it seems to me americans are virtually scared by electronics and fuel injection  (just look at some magazines: "Supercharged - without electronics!" .... "520hp LS1 without touching the PCM...." etc etc)
Hopefully they also soon offer a mechanical fuel pump or a conversion to Diesel to get rid of that mean tricky ignition

Could be for a variety of reasons. For example, to race in a class that does not allow fuel injection, appearance, easebe of tuning with out a dyno and a computer, higher flow that the current manifolds will support, etc. Ever try porting a nylon manifold? What do you think it costs to purchase a set of richer carburetor jets as opposed to a set of 8 injectors? Sometimes it is just do your own thing. I don't necessarily understand it, but I also don't understand trying to hop up a 4 or 6 cylinder. To each his own.

I think it is designed for the older cars and older owner who grew up tuning with carbs and distributors. Not everyone wants to put in a wiring harness and have the fuel tank modified for fuel injection.

everybody is converting the old dynosaur carbs. to injection nowadays ,
and some do it the other way round..
back to the 60's

If you think that was strange, Barry Grant just came out with a manifold for the LS series engines with three, two barrel Demon Carbs. That would look cool in a 32 HiBoy. Especiallly if you polished the block, heads and manifold, valve covers, etc. That would be phenomenal. No way a nylon manifold can ever match that!!!!
