I know that for no reason the car is falling on its face @ WOT. I will pull the intake and change them tonight.

A knock senser is going to work or it isnt (except for that elusive .05% that half work that you read about on the internet).
For what ever reason, and there are 3 (fuel/spark/air) your motor is falling flat. Air is easy, fuel shouldnt be a problem as you have aftermarket fuel systems, and spark which shouldnt be a problem with your COP setup.
You must have access to a scan setup, does it pull timing all the time and you just feel it when the PCM grabs handfuls of timing because of real or perceived knock? Possibly you're making newer and louder racket with your new setup that is triggering it. You can try wrapping some thread tape around the KS to deaden it up alittle, or de tune them alittle with some creative computer tuning.
Sucks that yours are under the intake and not in the side of the block like mine, but even if it was I really doubt a KS could go bad.

well you can rulle out the knock senors by unpluggin them and trying it . pain in the ass but it works, especially if you donot have a scan too.
Also on the torqueing of the knock sensor , it is best to under torque with a dab of silicone to keep them from backing out
